Pumpkin pie from Guinea…different and simple!

One of many dishes that stood out on our 1st Shop Anniversary Event, was this delicious pumpkin pie recipe by our Guinean friends! Here is how we made it. Now you can do it too by following these simple steps!

Ingredients you will need:

  • 1 orange pumpkin
  • Cloves
  • Nutmeg
  • 1 vanilla
  • 1 stick of cinnamon
  • Cane (or sugar)
  • Juice of half a lemon
  • 1 cup of milk
  • A little cornflower
  • Peanuts
  • Kourou dough

Step By Step

  1. Clean the pumpkin and grind it in the blender.
  2. Put the sugar in the saucepan to melt, add the ground pumpkin, cloves, nutmeg, cinnamon and a glass of water and leave it on a low heat until the pumpkin pulp binds and softens.
  3. When it is almost ready, add the vanilla and lemon juice. Then the milk and the cornflour. Mix well. Allow the mixture to cool.
    Put oil or butter in a pan and lay the kourou sheet.
  4. Add the mixture and finally the peanuts. Bake at 180°-200° degrees for 35-40 minutes.

Useful Tips:

?? Instead of cornflower, we often use fine semolina.
??You can make your own dough, we use kourou dough for convenience. We have also tried puff pastry, but is is more buttery.
??Instead of sugar, you can use sugarcane or sugarcane honey
??The daring ones can try adding a red apple and/or two carrots in addition to the pumpkin that the traditional recipe has. We have tried it and the result is great!
