Ingredients:

1 cup hot water

4 cups of water

3 tablespoons tapioca pearls

1 can of coconut milk

3 cups ripe bananas (plantain or regular) sliced 1/2

4 cups of water

Sugar or honey (in the amount you like)

salt (for flavor)

Roasted sesame and / or salted pistachio for garnish (optional)

Instructions:

Soak the pearls in warm water for 20 minutes. Put 4 cups of water in the pot until they boil. Add the banana pieces. Drain the tapioca pearls and pour over the cold water and add them to the pot. Let it simmer for 3 minutes or until the tapioca pearls acquire an opaque translucent color.

Then add the sugar and milk or coconut cream. Continue stirring gently for another 3 minutes until simmering.

Add salt for taste.

Add garnishes such as sesame or salted pistachio.
